For the DRESSING:

❤ I n s p i r a t i o n ❤
— YES, I eat a lot of salad…a lot a lot a lot of salad….but that’s because I am a man, I’m 6′2″, I have the skinny gene, I have muscle to maintain, I engage in a high level of daily activity, and because I eat primarily low fat raw fruits, vegetables & herbs (with nuts & seeds in the winter)…so by definition I would have to eat a much larger volume of food, as fruits & vegetables are by far the least calorically dense foods out there…obviously…but what’s not so obvious these days is how MUCH more it really ends up being, as we simply are not regularly exposed to this sort of thing in the mainstream world.
— Think of me as your coach or as one of your cheerleaders, as someone who is giving you permission to be happy & healthy!
— I feel more like a fruit & vegetableist than a raw foodist as today raw food can mean dehydrated, heavy, dense, high-fat foods that you buy in bags…which seems quite far removed from the natural act of being able to pick an apple from a tree and eating it. Sure, its fun to have heavier foods like that sometime, but for day to day I think most of us here are more concerned with detoxifying, regenerating & getting more healthy. Right?
— One cannot just stimulate themselves into health…you really do have to alkalize & energize your cells with the simplicity of the fruits, vegetables & herbs.
— When it comes to the acid alkaline interactions happening in your body at any given moment, it takes 20 parts alkaline to neutralize 1 part acid. So if you’re really sick or have some serious disease, it is gonna take more than 1 green juice or even a few green juices for your body to finally become alkaline…for you literally need to undo an entire lifetime of acidosis…but it can be done, if you just stick with it and keep moving forward!
— My Mom is eager for us to go south to visit her and help her get healthy! She has suffered from fibromyalgia for a long time and hasn’t been 100% receptive to me helping her get healthy via raw fruits & vegetables, but lo and behold the liferegenerator channel on YouTube has her all inspired! The only problem though is that the funds are extremely tight for us now…we are just barely squeaking by, but we need to build a slight cushion before leaving so we can be sure we will have enough for gas & RV lot rentals, etc.
— Anything you can do to help us out and to help me get my shirt off and then keep it off throughout the winter is very, very, very much appreciated!!!

Atkins Diet and Cholesterol: Facts and myths
* First my apologies that Pinnacle Studios screwed up the audio – video sync at the end (7:40). I tried redoing the video three times, but the same out of sync happened each time.*
In this video, I deal with another one of the myths that Atkins Diet increases one’s cholesterol level due to its saturated fats. This misconception has been proven false over and over in many different studies. At very least, here is my anecdotal evidence.
My Cholesterol (Starting to Now)
Total Cholesterol – 198 to 153
LDL Cholesterol – 148 to 95
HDL Cholesterol – 35 to 58
Triglycerides – 135 to 43
What’s Good and Bad?
http://cholesterol.emedtv.com/hdl/hdl-ldl-ratio.html
“It is the ratio between the level of HDL-”good” cholesterol and total cholesterol that we need to be concerned about. Therefore, in adults, the HDL-”good” cholesterol/total cholesterol ratio should be higher than 0.24 (just divide your HDL level by your cholesterol).
Generally speaking, the higher the ratio, the better (the lower your risk of a heart attack).”
Mine – .61
This popular medical belief ignores however that all LDL molecules are not necessarily created equal.
“It appears common for people with high triglycerides to have low HDL’s, and these same people also tend to have high levels of clotting factors in their blood stream, which is unhealthy in protecting against heart disease.
Therefore, in adults, the triglyceride/HDL-”good” cholesterol ratio should be below 2 (just divide your triglycerides level by your HDL). Or more precisely, the triglyceride/HDL ratio:
2 or less is considered ideal
4 – high
6 – much too high”
Mine – .74
It is now believed that the triglycerides/HDL ratio is one of the most potent predictors of heart disease.
A Harvard-lead study author reported:
“High triglycerides alone increased the risk of heart attack nearly three-fold. And people with the highest ratio of triglycerides to HDL — the “good” cholesterol — had 16 times the risk of heart attack as those with the lowest ratio of triglycerides to HDL in the study of 340 heart attack patients and 340 of their healthy, same age counterparts.
The ratio of triglycerides to HDL was the strongest predictor of a heart attack, even more accurate than the LDL/HDL ratio. (Circulation 1997;96:2520-2525).”
Other Studies, which prove to healthy nature of Atkins or Low Carb in respect to heart health:
* Weight Loss with a Low-Carbohydrate, Mediterranean, or Low-Fat Diet
http://www.ncbi.nlm.nih.gov/pubmed/12106620
“The low-carbohydrate group consumed the smallest amount of carbohydrates and the largest amounts of fat, protein. … The mean weight loss was 2.9 kg for the low-fat group, and 4.7 kg for the low-carbohydrate group. … The relative reduction in the ratio of total cholesterol to high-density lipoprotein cholesterol was 20% in the low-carbohydrate group and 12% in the low-fat group”
* Effect of 6-month adherence to a very low carbohydrate diet program.
Am J Med. 2002 Jul;113(1):30-6.
“Serum total cholesterol level decreased 11 +/- 26 mg/dL, low-density lipoprotein cholesterol level decreased 10 +/- 25 mg/dL, triglyceride level decreased 56 +/- 45 mg/dL, high-density lipoprotein (HDL) cholesterol level increased 10 +/- 8 mg/dL, and the cholesterol/HDL cholesterol ratio decreased 0.9 +/- 0.6 units.”
* Comparison of high-fat and high-protein diets with a high-carbohydrate diet in insulin-resistant obese women.
Diabetologia, 2005 (Vol. 48) (No. 1) 8-16
These observations suggest that the popular diets reduced insulin resistance to a greater extent than the standard dietary advice did. When compared with the HC diet, the HF and HP diets were shown to produce significantly greater reductions in several parameters, including weight loss, waist circumference and triglycerides. LDL cholesterol decreased in individuals on the HC and HP diets.Of those on the HF diet, 25% showed a more than 10% increase in LDL cholesterol, whereas this occurred in only 13% of subjects on the HC diet and 3% of those on the HP diet.

* I n s p i r a t i o n *
— CONTEXT is always important. If using a food processor to quickly chop up your salad is going to make or break you having salad, then please use the food processor without guilt! It’s not like you are doing something that couldn’t be done w/ your bare hands (such as heat it or chemically alter it). You MUST remember to have fun on your healthy raw food and/or “fruit and vegetable” path! Leave all dogma behind…um, except for this requirement to have fun!
— I want to express again how absolutely *honored* I am that you’re watching these videos, are getting things out of it & are improving your life. Me starting this channel literally came out of me just one day daring myself to make a video and put it up on YouTube playing the part of a raw food teacher! Ignore the actual stats I through out in this video, as Krista looked up the facts (that is why I need her, as I’m a space cadet when it comes to numbers and stuff!). She says that it looks like I uploaded my first vid on 4/22/09 and that at first I averaged about 1 comment a day total on all of my videos combined. After a couple of months of that, Krista got on board around the beginning of July & that is when things really began to take off: Her adding in text in the info sections, as well as tags & various keywords allowed more people like you to find these videos when you needed them.
— So Krista & I are just having a blast now, us knowing that people like you are into watching & learning from these vids…and most importantly are also into keeping things lighthearted & fun…and are not taking anything TOO seriously.
— I’ve fanatically studied health for many years & have simply witnessed that people tend to get healthy the quickest & the easiest simply by eating & drinking more fruits & vegetables, while simultaneously cutting out as much meat & dairy animal products as possible! It’s that simple.
— I have nothing against meat and dairy products per se, it’s just that when they are removed from the diet then all of these health problems seem to just magically go away: Cholesterol goes down, excess weight is lost, etc. Perhaps for you you will find having some eggs now and then (raw or cooked) is balancing for you. Krista wanted to share here that for the last few months she was in NYC, she was having eggs every morning for breakfast just so she could feel “grounded, albeit in an unnatural lifestyle” and survive until she could get out of NYC and be reconnected with Mother Nature. Once she left NYC, she didn’t ‘need’ the eggs anymore. So the context to keep in mind here is that the more natural you can make your own environment…via increasing things like fresh air, exposure to the sun, exercise, healthy home and work environments, then the easier and more ‘automatic’ will eating raw fruits and vegetables become.
— I don’t mean to be immodest, but this dressing turned out to be off the hook!
— Fruit or a green juice for breakfast, followed by a green juice or fruit for lunch, and lastly a salad for dinner…it works for me…but you be the judge! Always remember to simplify your eating more & more…your mind, body & digestion will be thanking you! …and always remember that I really, really, really cherish this time with you.

Atkins Recipes: Mock Danish
I performed my first low carb cooking demonstration and showed the world the wonders of the mock danish. Mock danishes were one of the new comfort foods that I learned how to cook and was used to kill cravings that threatened the diet early on. Some qualifications for Kent’s comfort foods were it had to be both easy and quick to make, and it could not have a lot of ingredients to prep. Most of the recipes, I will be demonstrating have my seal of approval for taste and ease in preparation.
Here is the Mock Danish recipe:
2 oz Cream Cheese, softened
1 egg
1.5 – 2 tsp Splenda (**count against artificial sweetener count for the day)
1/2 tsp Vanilla
1 TBS Ground Flax meal (optional)
Topping
1 TBS Butter
.5 tsp Splenda
Dash Cinnamon

Atkins Diet Recipes: Fauxtatoes
My second cooking show on how to make low carb comfort foods. Fauxtatoes are a great dish to have at Thanksgiving or for those who typically have to fight to get their veggies. A couple of my kids and my wife even make cameo appearances in this video. It’s the least I can do for all the taste testing I make them endure as I try new recipes. My non-low-carbing family members even like this recipe as an alternative to starchy mashed potatoes.
Try this recipe; I think it’ll be a hit with you as well!
Recipe:
1 Head Cauliflower
2.5 TBS Butter
1/3 cup Heavy Cream
1 Chicken Bouillon cube
1 tsp salt
White pepper to taste
Directions:
* Cook Cauliflower until fork tender. Drain well.
* Place cooked cauliflower and other ingredients (crush bouillon cube first) into the food processor. Run on high until consistency of mashed potatoes. You may need to scrape the sides of the bowl a couple times to prevent lumps.
